Hot Dog Baked Corn Bread

I cook a lot.  I mean- quite a lot.  I make dinner about 6 out of 7 nights of the week, and it’s usually good.  My fiance is very lucky to find someone who likes to cook and is willing to cook for him.  He is a horrible cook!  He is great at dishes, though.  Lucky for him.  Anyway- yesterday I made hot dog baked corn bread for him.  It’s the first time I’ve made this dish.  This simple dish, this amazingly easy- doesn’t really take much effort, you take me for granted so here’s something super easy- dish. 

Yeah- it’s his new favorite.  Move over baked chicken with root vegetables and lemon dill tilapia with artichokes.  Ben has a new favorite food.  I feel as if something like the man’s favorite food deserves to be shared.  Now everyone knows what to make him for his birthday, special events, or if you just want to be nice to him.  Yup.

We start with the basic ingredients:

Hot dogs
Jiffy cornbread mix
eggs
milk
oil (not pictured)

Mix the bread ingredients together, add a little oil for moistness, and pour into a greased pan. I used a very large pan, so I made three boxes of corn bread mix. If I was making it in a 9 x 9 pan. I would have only made 2. Slice the hot dogs into bite-sized pieces and press into your batter.  Pop in the oven at 400 for about 30 minutes.

While it’s baking, start heating up your baked beans.  I like to add garlic salt and brown sugar to mine.  Yum!

Take it out when it’s golden brown.

  1. That looks delicious! My mom is vegetarian and I’m wondering if it would still work with those icky veggie dogs she eats. We need something for tonight. Maybe with some cheese?

  2. I’ve tried it with veggie hotdogs (I used to be a vegetarian), and my favorite are the morning star brand. I think cheese would be really good with it! I don’t know of any vegetarian cheese dogs, but that would be good!

  3. I tried this in muffin cups, it was a fun ‘finger food’ the outside was all crunchy goodness, almost like a real corndog.

  5. Awesome. I’m going to make it right now. Oh and for the vegatarians the veggie corndogs in the freezer section are very good. Good enough for anybody. I love them. Hotdogs are nasty though. Why the difference I don’t know.
